- Wash lemons thoroughly and zest them.

- Cut lemons into thin slices and remove seeds.
- Place lemon slices, zest, sugar, and water in a saucepan.
- Cook over medium heat, stirring until sugar dissolves.

- Reduce heat and simmer for 25–30 minutes until thickened.
- Stir occasionally to prevent sticking.
- Remove from heat and let cool slightly.
- Pour into clean jars and seal.
- Let cool completely before storing.
