Turn simple cabbage into a delicious side dish with this Easy Roasted Cabbage with Onion Dijon Sauce. Thick cabbage wedges are roasted at high heat until tender in the center and beautifully caramelized around the edges, then finished with a buttery Dijon sauce flavored with onion and garlic. It’s an easy cabbage recipe that comes together in about 25 minutes and pairs perfectly with chicken, steak, sausage, or other weeknight dinners.
Ingredients
For the Roasted Cabbage
- ½ medium green cabbage, about 1½ pounds
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
For the Onion Dijon Sauce
- 3 tablespoons butter
- 2 tablespoons finely minced onion or shallot
- 1 tablespoon Dijon mustard
- ½ teaspoon minced garlic
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
- 1–2 teaspoons milk or cream, optional
- Fresh parsley or chopped chives, for garnish
Instructions
1. Prepare the Cabbage
Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper or lightly grease it.
Remove any loose outer leaves from the cabbage. Cut the cabbage in half, then cut one half into four thick wedges. Keep a portion of the core attached to each wedge so the leaves stay together during roasting.
2. Season the Cabbage
Arrange the cabbage wedges on the prepared baking sheet. Brush both sides with olive oil and season generously with salt and black pepper.
3. Roast Until Caramelized
Place the cabbage in the oven and roast for 10–12 minutes. Carefully flip each wedge and continue roasting for another 8–10 minutes, or until the cabbage is tender and the edges are deeply browned and crispy.
The caramelized edges are one of the best parts, so don’t worry if they become quite dark.
4. Make the Onion Dijon Sauce
While the cabbage is roasting, add the butter, minced onion, Dijon mustard, garlic, salt, and black pepper to a small saucepan.
Cook over medium heat, stirring frequently, until the butter has completely melted and the onion and garlic are fragrant. If you prefer a smoother, milder sauce, whisk in a teaspoon or two of milk or cream.
5. Finish the Sauce
Remove the sauce from the heat and whisk it well before serving. If the butter separates slightly, simply whisk it again until the sauce comes together.
6. Serve
Transfer the roasted cabbage wedges to a serving platter. Spoon or drizzle the warm Onion Dijon Sauce over the center of each wedge.
Finish with fresh parsley or chopped chives and serve immediately.
