Ingredients

  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14 oz) diced tomatoes
  • 5 cups beef or chicken broth
  • 8 lasagna noodles, broken into pieces
  • 1 tablespoon tomato paste
  • ½ teaspoon red pepper flakes, optional
  • ½ cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish

Instructions

1. Brown the Beef

Heat the olive oil in a large pot over medium-high heat. Add the ground beef and cook for 5–7 minutes, breaking it apart with a wooden spoon, until browned and cooked through.

Drain excess grease if needed.

2. Add the Onion and Garlic

Add the diced onion and cook for 3–4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.

3. Build the Soup Base

Stir in the tomato paste, Italian seasoning, basil, oregano, salt, black pepper, and red pepper flakes if using. Cook for about 1 minute.

Add the crushed tomatoes, diced tomatoes, and broth. Stir well and bring the soup to a gentle boil.

4. Simmer

Reduce the heat and let the soup simmer for about 10 minutes, allowing the tomato base and beef to develop a rich flavor.

5. Add the Lasagna Noodles

Break the lasagna noodles into smaller, uneven pieces and add them directly to the pot. Cook for about 10–12 minutes, stirring occasionally, until the noodles are tender.

6. Add the Cheese

Reduce the heat to low. Stir in the ricotta and Parmesan until the soup becomes creamy and the cheese is incorporated.

For extra cheesy flavor, add some mozzarella directly into the pot and stir until melted.

7. Serve
