Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, diced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 4 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 package (9 oz) refrigerated cheese tortellini
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

1. Sauté the Vegetables

Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Cook for 5–6 minutes until the vegetables begin to soften. Add the garlic and cook for another minute.

2. Add the Seasonings and Broth

Stir in the Italian seasoning, thyme, salt, and black pepper. Pour in the chicken broth and bring the soup to a gentle boil.

3. Add the Chicken and Tortellini

Add the shredded chicken and cheese tortellini to the pot. Reduce the heat and simmer according to the tortellini package directions, usually about 5–7 minutes, until the tortellini are tender.

4. Make It Creamy

Lower the heat and slowly stir in the heavy cream. Simmer gently for 2–3 minutes. Avoid boiling vigorously to keep the cream smooth.

5. Add Spinach and Parmesan

Stir in the fresh spinach and Parmesan cheese. Cook for another 1–2 minutes, just until the spinach wilts and the cheese melts into the broth.

6. Serve

Taste and adjust the seasoning if needed. Ladle the Creamy Chicken Tortellini Soup into bowls and garnish with fresh parsley and extra Parmesan.

Recipe Tips

  • Use rotisserie chicken to make this soup even faster and easier.
  • Don’t overcook the tortellini; they can become too soft if left simmering too long.
  • Add the spinach near the end so it stays fresh and vibrant.
  • For a thicker soup, add a little extra Parmesan cheese.
  • Serve with crusty bread or garlic bread to soak up the creamy broth.
